Ability to List Product Variants on Category Pages

I would like to have the ability to choose whether or not to have the variants of products listed on the category pages as individual items.  Once the link is clicked it would take the customer the product page that gives you variant options.

For example: If there is a product available in black or white, I would like to have the option to list the black and white table individually on the category page but once the link is clicked the customer would go to the page where you can choose black or white.
